Sourdough & Lean Breads

Our sourdough starts with a starter kept alive through years of daily feedings. We bake one round at a time — no improvers, no shortcuts. The crust cracks. The crumb opens. That's the only spec we care about.

Croissants layered the way they should be — 72 hours of folding, lamination that shatters when you break one open. Pain au chocolat, fruit tarts, and seasonal specials that rotate with what the kitchen demands.

We stock what we'd buy ourselves — olive oils from small producers, house-made preserves, flours, and pantry goods that complement the bread. If it doesn't earn a spot on our shelf, it doesn't leave the door.

Our Story

Glass Slipper grew out of a simple conviction: Milwaukee deserves a bakery that treats time as an ingredient, not an obstacle. We opened our doors on 3250 N 2nd Street with one oven, a sourdough starter, and a list of standards we weren't willing to bend.

The North Side has always been a neighborhood that values honesty — in work, in food, in community. We bake for that. Every morning, the dough goes in before dawn. By the time the door opens, the building smells like it always will: wheat, heat, and patience.

Our Process

Four principles that
govern everything we bake.

Wild fermentation, always.

No commercial yeast. No accelerated proofs. Our sourdough cultures are fed daily and every loaf carries the character of its own fermentation window.

Flour is the foundation.

We source from millers who understand terroir. Protein content, ash, harvest date — these aren't details, they're the recipe.

Bake what matters.

We don't fill a case to look full. We bake what we can stand behind, and when it's gone, it's gone. That's how scarcity works in our favor.

Neighborhood first.

We're on the North Side because this is our community. The groceries we stock, the hours we keep, the people we serve — it all starts here.
